You\'ll implement all the food policies and procedures in the kitchen and ensures compliance.
You\'ll be recognizing good quality products and presentations and enforces these.
You\'ll be maintaining high sanitation standards throughout the kitchen and working stations.
You\'ll be checking and maintaining all service standards established for the kitchen.
You\'ll know of requisition point and par stock level for kitchen supplies.
You\'ll constantly strive for new innovative ideas in the menu and new concepts of production and presentation.
You\'ll know and understands all the kitchen policies and procedures in food production.
You\'ll be supervising staff activities to maximize revenue and minimize costs and minimize the possibilities of accidents and cross contaminations.
You\'ll ensure sufficient preparations for the elaboration of the whole menu according to recipe manuals.
You\'ll attend meetings and training sessions organized by the Hotel management for the position.
You\'ll be directing the subordinate kitchen brigade in maximising all resources to achieve high quality and excellent all over cost control.
You\'ll maintain good morale and co-operation within the team.
You\'ll ensure that subordinates personal hygiene is always up to the highest standard.
You\'ll recommend corrective actions for unfavourable variances in Food cost commitments.
You\'ll manage the preparation and distribution of kitchen items to all outlets and functions under detailed instructions from Chef Tournant & Head Chef.
You\'ll prepare, conduct, and supervise training for subordinates.
You\'ll communicate effectively with subordinates, immediate superiors and other department heads.
You\'ll be capable of expressing clearly, listening, and absorbing information.
You\'ll deputise in the absence of the Chef Tournant or the Head Chef.
You\'ll work in a safe manner in accordance with HACCP regulations.
You\'ll ensure Dubai Municipality Food Control Section Regulations are adhered to in detail, that the Stewarding records are up to date and filled in correctly.
You\'ll assist the Head Chef, Chef Tournant, to initiate and prepare new menus for a la carte, buffet, themed menus with innovative ideas. From conception, tasting, costing photos and recipes through to implementation.
You\'ll identify and report to the Head Chef, Chef Tournant, all food items which are not up to the quality standard.
You\'ll control Food Stock in regard to freshness and expiry date. Order food daily as required using Future Log, ensuring that the food cost is kept in line.
You\'ll understand all Hot Meals Production and Cold Meals Production Process.
You\'ll direct the activities of food quality, productivity, and creativity to maintain and improve standards according to menus, a la carte, promotions, and special requirement.
You\'ll be capable of deciding the level of authority and responsibility that can be delegated.
You\'ll carries out a firm and fair employee treatment policy.
You\'ll prepare all food purchase requests for the Kitchen.
You\'ll coordinate with Stewarding for needs of setup, equipment storage and cleaning needs of kitchen.
You\'ll responsible for ensuring the Kitchen is covered with management staff during operation.
You\'ll evaluate objectively the performance of Kitchen staff.
You\'ll deputise for the Head Chef, Chef Tournant in his absence.
Management
You\'ll follow the technical guidelines and preparation processes to the letter, avoiding all wastage.
You\'ll manage inventories and orders for food products, adapting stocks to variations in consumption.
You\'ll manage kitchen appliances.
You\'ll motivate a strong team amongst Kitchen.
You\'ll prepare, conduct, and supervise on-the-job training for Kitchen staff and make it relevant and interesting. Also, record said training with the assistance of the Head Chef and Culinary Admin.
You\'ll manage time effectively, by meeting deadlines on time.
You\'ll be coaching and counselling subordinates effectively.
You\'ll identify training needs within Kitchen staff and implement employee development and training programs. Coordinating with the Head Chef and Culinary Admin, ensuring that the nominated employees attend the training courses.
You\'ll begin and maintain a training matrix for all the kitchen staff.
You\'ll make the weekly rotas, vacation planner and monthly attendance sheet.
You\'ll check e-mails regularly for new information pertaining to the kitchen operation.
You\'ll ensure all staff are working with safe and hygienic practices.
You\'ll be attending daily briefings and keeping communication transparent.
You\'ll ensure documentation of all production and temperature records as per HACCP manual in the responsible area.
Hygiene & Safety
You\'ll ensure that the workplace and storage areas remain clean and tidy, and the safety of consumable goods by always respecting HACCP regulations.
You\'ll respect the instructions and safety guidelines for the equipment used.
You\'ll apply the hotel's safety regulations (in case of fire etc.).
You\'ll Responsible for HACCP documentation and/or Food watch if the system is implemented.
You\'ll respect the hotel's commitments to the "Planet 21" sustainability program (saving energy, recycling, sorting waste etc.).
QualificationsYour personality counts more than your CV
Vocational diploma in food & beverage and/or any initial training.
Previous experience as a Sous Chef in a hotel or restaurant, and can speak English fluently.
You can inspire your fellow staff just as you can inspire your guests.
You're passionate about good food, and enjoy discovering new concepts.
Flexibility to work mornings, evenings, weekends, and holidays as required.
Food handler's certification or willingness to obtain one.
You're a doer - and even if you do it wrong sometimes, you openly admit it.
You're not just bringing your abilities, but also your character.
