Maintain a good HACCP record and verifying continuously for its tracks and work closely with hygiene manager if any challenges to sort out. To make sure the food that prepared on your premises or responsible area, its on correct temperature, made it with correct recipe, with all the appropriate component. Trains regularly all subordinate chefs and make sure that they fulfil their duty with loads of confidence and less supervision and optimum usage of time and talent. Accepts flexible work schedule necessary for uninterrupted and smooth service operation in the assigned kitchen operations. Active member of monitoring food cost control, food wastage analysis, and general product usage analysis. Keep a track of staff performance, and any disciplinary behavior to be addressed immediately Communicates effectively with guests, subordinates, immediate supervisors and other section heads. Conduct a one on one with employees on a monthly base and track those to submit to Executive Chef. Manages time effectively by meeting deadlines before or on time. Administers personnel action on leaves & overtime requests, disciplinary actions and commendation. Assists in budgetary and payroll expense control as if required. Identifies and solves problems in a professional manner and pass the message or any related to Executive chef.
