We are seeking a highly skilled and experienced Senior Sushi Chef de Partie (CDP) to join our culinary team. The ideal candidate will have extensive knowledge and expertise in sushi preparation techniques, a passion for delivering exceptional dining experiences, and the ability to lead a team effectively. As a Senior Sushi CDP, you will be responsible for overseeing the sushi section, ensuring the highest standards of quality, consistency, and presentation are maintained at all times. Responsibilities:
Sushi Preparation: Prepare and present a wide variety of sushi dishes, including nigiri, sashimi, maki rolls, and specialty rolls, with precision and attention to detail.
Menu Development: Collaborate with the Head Chef and other team members to develop innovative sushi menu items, incorporating seasonal ingredients and culinary trends while maintaining authenticity.
Quality Control: Maintain strict standards of quality and consistency in all sushi preparations, ensuring that every dish meets the established criteria for taste, texture, and presentation.
Team Leadership: Lead and motivate the sushi team, providing guidance, training, and support to junior staff members, and ensuring smooth operations during service hours.
Inventory Management: Monitor inventory levels of sushi ingredients and supplies, placing orders as needed to maintain adequate stock levels while minimizing waste and controlling costs.
Food Safety and Hygiene: Ensure compliance with all food safety and hygiene regulations, implementing best practices for food handling, storage, and sanitation in the sushi kitchen.
Customer Satisfaction: Work closely with front-of-house staff to ensure that customer preferences and dietary restrictions are accommodated, and that any special requests or feedback are addressed promptly and professionally.
Kitchen Maintenance: Oversee the cleanliness and organization of the sushi Section, including equipment maintenance and sanitation procedures, to ensure a safe and efficient working environment.
Cost Control: Assist in monitoring food costs and budgetary targets for the sushi section, identifying opportunities for cost savings without compromising quality or guest satisfaction.
Qualifications:
Proven experience as a Sushi Chef de Partie or similar role in a high-volume, fine dining establishment.
In-depth knowledge of traditional and contemporary sushi techniques, ingredients, and presentation styles.
Strong leadership and communication skills, with the ability to inspire and motivate a team.
Excellent organizational and time management abilities, with a keen eye for detail.
Certification in food safety and sanitation (e.g., ServSafe) is highly desirable.
