Job Summary
The Cost Controller is responsible for optimizing the financial performance of the restaurant by meticulously managing food, beverage, and labour costs. This role requires a keen eye for detail, strong analytical skills, and a deep understanding of the restaurant industry. The Cost Controller will collaborate closely with operations, purchasing, and finance teams to implement cost-saving measures, enhance profitability, and ensure accurate financial reporting.
Responsibilities
• Financial Analysis:
• Develop and implement cost-control strategies to optimize profitability.
• Conduct in-depth analysis of food, beverage, and labour costs, identifying areas for improvement.
• Prepare and analyse financial reports, including profit and loss statements, food cost percentages, and labour cost percentages.
• Monitor and control food, beverage, and labour expenses within budget parameters.
• Identify cost variances and implement corrective actions.
• Inventory Management:
• Oversee inventory control processes to minimize waste and spoilage.
• Conduct regular physical inventory counts and reconcile discrepancies.
• Establish and maintain accurate inventory records and pricing.
• Optimize inventory levels to balance supply and demand.
• Menu Engineering:
• Collaborate with the culinary team to analyse menu profitability.
• Assist in menu development and pricing strategies.
• Conduct menu item costing and pricing analysis.
• Purchasing and Procurement:
• Work closely with the purchasing department to negotiate favourable supplier contracts.
• Analyse supplier performance and identify cost-saving opportunities.
• Implement purchasing procedures to ensure quality and cost-effectiveness.
• Labor Management:
• Analyse labour costs and staffing levels to optimize efficiency.
• Develop and implement labour scheduling strategies.
• Monitor employee turnover and implement retention initiatives.
• Financial Reporting:
• Prepare accurate and timely financial reports for management.
• Provide financial insights and recommendations to support decision-making.
• Adhere to financial policies and procedures.
• Team Management:
• Lead and develop a team of cost control analysts.
• Provide training and support to restaurant staff on cost control procedures.
Qualifications
• Bachelor's degree in Accounting, Finance, or Hospitality Management.
• Minimum of 5 years of experience in cost control or financial analysis within the restaurant industry.
• Strong analytical and problem-solving skills.
• Proficiency in financial software and data analysis tools.
• Excellent communication and interpersonal skills.
• Attention to detail and accuracy.
• Ability to work under pressure and meet deadlines.
Desired Skills
