About Us
Le Bistro by Salmontini is a celebrated dining destination in Abu Dhabi, renowned for its exquisite seafood offerings and commitment to culinary excellence. We are seeking a talented and creative Freelance Japanese Chef to collaborate with our team on a project basis (1-3 days at a time) and elevate our menu with authentic and modern Japanese cuisine.
Key Responsibilities
• Create and Develop: Introduce innovative Japanese dishes across key categories, including sushi (elevated maki, nigiri, sashimi), tempura, ramen, gyoza, yakitori, donburi, and katsu, that align with Salmontini high-quality standards.
• Culinary Expertise: Provide expert knowledge in traditional/contemporary Japanese cooking techniques, ingredient selection, and artful presentation.
• Menu Collaboration: Work closely with our culinary team to seamlessly integrate Japanese dishes into the existing menu.
• Team Training: Conduct hands-on training sessions for the kitchen staff to ensure dishes are replicated consistently and with precision.
• Knowledge Sharing: Educate the team on Japanese culinary traditions (classic and contemporary), techniques, and best practices.
• Trend Analysis: Stay informed about current trends in Japanese cuisine and propose dynamic additions to keep the menu fresh and appealing.
Requirements
• Proven experience as a Japanese chef, with expertise in key categories like sushi (maki, nigiri, sashimi), tempura, ramen, gyoza, yakitori, donburi, and katsu, among others.
• Deep knowledge of authentic Japanese cooking methods, ingredients, and flavor profiles.
• Creativity and passion for culinary innovation, with a keen eye for detail in presentation.
• Experience in training and mentoring kitchen teams to replicate dishes accurately.
• Flexibility to work on a project basis (1-3 days per engagement) as required.
• Ability to produce recipes, SOP's, market list and costing associated with new dishes
• Strong communication skills and a collaborative mindset to work effectively with a diverse team.
