Ensure the smooth running of the back of house department on a day to day basis and delegate tasks where appropriate and implementing pre-shift and post-shift briefings.
Prepare annual budget for back of house department with the Area Supervisor.
Able to provide direction for all day-to-day operations in the kitchen.
Actively involves in menu development and maintaining updated and accurate costing of all dishes prepared and sold.
Able to develop recipes and determine how to present the food.
Order and maintain inventory of food and supplies needed to ensure efficient operations.
Control and direct the food preparation process.
Assist the Area manager and the management in supervising the functioning of all kitchen employees, facilities and ensure financial targets are achieved.
Make recommendations to management for modernization of equipment, production methods, presentation and improved guest satisfaction.
Make sure that food is prepared, labelled with shelf life properly and stored up to the standards and delivered according to the used record provided.
Review, control & approve all daily paper duties, weekly schedules, wastage forms, attendance sheets of the kitchen.
Keep all employees promptly & fully informed of all problems, and any unusual matters. Able to take prompt corrective action where necessary or suggests alternative courses of action.
Maintains stock levels of all kitchen supplies.
Provide ongoing training as needed regarding the food technique, new products and procedures.
Liaise with purchasing department to ensure prompt and efficient purchasing, issuing of supplies, stock and inventory control
