Responsible for the overall operation of a central kitchen production facility Provide leadership, support and guidance to team members to ensure that food quality, standard operating procedures, sanitation, inventory levels, food safety guidelines, productivity and customer service are met Motivate and supervise kitchen team to ensure daily production goals are achieved. Establish and manages manufacturing KPIs (key performance index) such as productivity, safety, quality, cost and delivery. Take corrective actions to achieve KPI as needed. Manage inventory levels and track food costs. Perform regular inventory assessments. Work closely with purchasing team to ensure that the central kitchen has the necessary ingredients and supplies. Prepare and present periodic records and reports related to food production, food costing, kitchen operations and any other, as required and requested. Set and implement standards, procedures, and processes for the manufacture of high-quality food products. Ensure quality of food produced by all team members while adhering to specified time limits. Training kitchen team members on all stations based on business needs to maintain a highly productive team working under an efficient schedule that meets labor budget Requirements 10 yrs experience in Food & beverage / Hospitality sector Minimum 5 years in food manufacturing management experience as Operations Manager/Process Leader Experience in leadership position in Food production setup is a plus Hands-on experience with planning menus and ordering ingredients Experience with vendor management, group buying organizations, rebate management, full truck load purchases Experience with product specification writing and quality control to meet food specifications for internally produced items Must be able to communicate effectively with Front of House staff, General Manager and Corporate team members
