Duties And Responsibilities:
1. Bakery Production & Operations Management
Oversee the daily production of all bakery products in the central kitchen.
Develop and implement production schedules to ensure timely supply to all BABA ROMA outlets.
Supervise the baking process, ensuring consistency, quality, and efficiency.
Maintain high standards of artisan bread-making, sourdoughs, baguettes, croissants, and other baked goods.
Optimize workflow to maximize productivity while minimizing waste.
2. Product Development & Innovation
Research and develop new bakery items aligned with market trends and customer preferences.
Enhance existing recipes to improve flavour, texture, and shelf life.
Introduce and implement modern baking techniques and trends.
Conduct menu tastings and trials to refine and perfect products.
3. Quality Control & Compliance
Implement strict quality control procedures to ensure all bakery products meet company standards.
Adhere to HACCP and Dubai Municipality health & safety regulations.
Conduct regular inspections and audits to ensure hygiene and food safety compliance.
Train bakery staff to maintain uniform quality in taste, texture, and presentation.
4. Cost Control & Inventory Management
Monitor ingredient usage and optimize inventory levels to reduce waste.
Work with the procurement team to source the finest raw materials at competitive prices.
Implement cost-control measures without compromising on quality.
Maintain detailed reports on ingredient consumption, production costs, and profitability.
5. Team Leadership & Training
Led and mentored a team of bakers, pastry chefs, and assistants.
Conduct regular training sessions on new baking techniques and best practices.
Foster a collaborative, disciplined, and positive work environment.
Evaluate and provide constructive feedback to enhance team performance.
6. Equipment & Kitchen Organization
Ensure all bakery equipment is well-maintained and fully operational.
Coordinate with the maintenance team for regular servicing and troubleshooting.
Recommend new equipment to enhance efficiency and production capacity.
Maintain a clean, organized, and structured bakery workspace.
7. Coordination & Communication
Work closely with outlets, purchasing, and logistics teams to ensure smooth supply chain operations.
Collaborate with management to forecast demand and set production goals.
Prepare and present reports on production performance, costs, and process improvements.
Qualifications & Requirement
4+ years of experience in bakery production, with at least 2 years in a leadership role.
Experience in a large-scale bakery or central kitchen (mandatory).
Strong expertise in artisan bread-making, sourdough fermentation, viennoiserie, and laminated dough.
In-depth knowledge of dough fermentation, hydration levels, and proofing techniques.
Experience in high-volume production and scaling bakery operations.
Strong leadership and organizational skills.
Knowledge of cost control, inventory management, and supplier coordination.
Excellent understanding of HACCP and food safety regulations.
Ability to introduce efficiency improvements and optimize baking processes.
Strong leadership and team management skills.
Excellent oral and written communication.
Good knowledge of MS Office, Excel, and working with ERP software.
