Our menu also features a range of elegant comfort food options for a delightful dine-in experience, and extensive selection of convenient grab & go offerings. We pride ourselves on delivering outstanding gastronomic experiences, and we are seeking a Head Baker who shares our commitment to excellence and ready to take the brand to a new height. Responsibilities:
Follow HACCP guidelines and ensure that colleagues comply with HACCP guidelines Minimum 2 years working experience as baker in well-known international hotel brands.
Extensive knowledge in breads
Ensure the food cost of his Bakery is in line with budget kitchen operating supplies, and kitchen energy costs.
Do not entertain unannounced visits from food or material suppliers.
Observes sales floor and back stock conditions.
Prepares and produces such bakery and specialty products as pastries, cakes, pies, muffins, breads, puddings, parfaits, frosting, cookies, rolls.
Requisition supply items as needed from storerooms.
Prepares and bakes all bakery items for menu and catered events following standardized recipes.
Looks after the full bread and pastries production line.
Estimates baking needs, requisitions adequate supplies, inventories supplies, and keeps records of products made and used.
Coordinates in details on the restaurant / banquet / food production, and all specific duties to all employees
Requirements:
5 years bakery experience in a luxury hotel environment or high-quality restaurant environment.
Knowledge of HACCP general health & safety in the workplace
Previous experience as a Head baker or in a related role preferred.
Previous experience as a supervisor in a related role preferred.
A Culinary degree from a recognized hospitality school preferred
