Join a prestigious luxury restaurant group in Dubai, overseeing pastry and dessert operations across nine renowned brands . We are seeking an experienced Group Executive Pastry Chef who is passionate about cakes and desserts, with heavy Ottolenghi and Donna Hay influences. You will be responsible for the day-to-day pastry operations, ensuring the consistent creation of high-quality baked goods and desserts.
Key Responsibilities:
• Management & Production:
• Ensure consistency and adherence to established recipes and presentation brand standards.
• Prepare, implement, and improve Standard Operating Procedures (SOPs) for the pastry department.
Cost & Quality Control:
• Implement and maintain high-quality standards for all pastry products.
• Conduct regular checks and tastings across all Tashas Group brands to ensure excellence.
• Monitor and control food costs, minimize waste, and optimize ingredient usage.
Menu Planning & Development:
• Work with the Culinary Director to create and update pastry menus.
• Collaborate with the Beverage department in developing new products.
Health & Safety:
• Ensure all Health & Safety and Food Hygiene guidelines are adhered to.
• Develop and implement policies and procedures for efficient and safe restaurant operations.
• Maintain food production records, reports, and department files as required.
People & Training:
• Provide training to pastry staff, fostering a positive and productive work environment.
• Keep the team updated on new techniques and trends in pastry arts.
• Support, lead, and motivate all pastry chefs.
Innovation and Development:
• Stay current with industry innovations, products, techniques, and equipment developments.
• Bring creativity by introducing new designs, recipes, flavor combinations, and presentations.
Qualifications:
• Experience: Minimum of 5 years as an Executive Pastry Chef in luxury hotels or high-end restaurant groups.
• Expertise: Strong focus on cakes and desserts (strong Ottolenghi & Donna Hay influence), with proficient skills in cakes, pastries and desserts.
• Education: Culinary degree or relevant certification from a recognised institution.
• Leadership Skills: Proven ability to lead and inspire a diverse team.
• Knowledge: Familiarity with international pastry trends and a passion for innovation.
• Language: Fluent in English; additional languages are an asset.
