The Role
This role will report to the Production Manager and will be responsible for the overall performance of our Flight Preparation and Assembly department. Key Responsibilities The Flight Assembly Officer plays an integral role within the business, this function is responsible for leading an efficient flight preparation and tray set department ensuring all completed flights are assembled to approved specifications which meet the approved GLP standard. In addition to this, the Flight Assembly Officer will work with the Executive Sous Chef and establish minimum and maximum stock holding to maintain optimum performance during flight build and tray setting. People & Safety Ensures adequate resources are deployed during peak and off-peak periods. Develops a high-performance culture through target setting and performance related discussions. Ensures all employees operate to standard operating procedures and remain safe. Develops, trains, and leads the team to the highest standard. Fresh Assembly and Tray Setting Ensures the team have direct access to all flight specifications and are periodically trained and assessed. Provides clear insight and direction to the Portioning Department on the daily meal volume requirement KPIs and end of shift buffer stock holding KPIs ensuring the right product is portioned and adequately chilled in readiness for flight assembly / tray set. Develops a minimum and maximum stock holding requirement in Flight Preparation Chillers highlighting to the business when these stock levels are depleted. Develops and maintains buffer stock for high-risk orders/products factoring in additional flights, last minute orders, late uplifts, and upgrades at check-in. Works with the Ware Wash Department and ensures the right equipment is being washed based on flight preparation KPIs and dispatch priority. Creates clear and visible Flight Preparation KPIs factoring in Portioning and Ware Wash requirements. Ensures flights are assembled to the correct specification and galley loading plan requirement (GLP). Ensures all CCPs (Critical Control Points) are achieved within the department. Oversees the performance of flow wrapping and ensures the team processes the required volume. Monitor inventory levels of food items and packaging materials and ensure minimum and maximum holding requirements are in place and visible. Uses data extracted from existing systems and develops Flight Build KPIs for Retail Onboard, Buy Online, Cabin Crew Tray Setting, and other flights. Maintains strict quality control standards to guarantee the freshness and safety of assembled products. Provides insights to the wider department on potential improved packing methods enhancing product integrity or maximizing space within airline catering equipment without compromising on quality. Ensures the team consistently conducts equipment checks prior to flight assembly and defective equipment is removed from operations. Develops CAPEX and OPEX requirements based on assembly KPIs and rotating buffer equipment. Proactively manages all equipment requirements to complete a flight / tray set. Works in collaboration with Operations and Procurement to place orders for equipment deficits. Develops minimum and maximum equipment holding requirements for Assembly Equipment for e.g., napkins, cutlery, trays for Y, J Class, etc.Requirements
Qualifications & Experience 3 to 5 years experience within a Flight Assembly Function. Proven experience in food production or assembly, preferably in the airline catering industry. Strong analytical skills with the ability to make data-driven decisions. Excellent organizational and time management skills. Effective communication and leadership abilities.
