This is not simply our job, it\'s our passion.Job SummaryThe Culinary Director manages and drives the Kitchen and Stewarding operations in a highly efficient, effective, and compliant manner while being a trusted leader and mentor to the team and focusing constantly on exceeding our guests\' high expectations and generating maximum profit. The Culinary Director forms part of the Food and Beverage senior leadership team who collectively make key strategic and operational decisions for the Food and Beverage operation.Key Duties and ResponsibilitiesManage all functions of the Food Production and Stewarding operations to achieve the optimum departmental profitWork closely with the Food & Beverage Management team with regards to the annual budget plan preparation and implementationImplements policies and procedures to enhance and measure quality; continually updates written policies and procedures to reflect state-of-the-art techniques, equipment and terminologyCollaborate with brand partners to achieve the brand vision, implement menu changes, and accomplish goals.Responsible for departmental Profit & Loss managementTrain, develop and motivate the team to meet and exceed established food preparation standards on a consistent basis.Ensure menus are reviewed periodically and seasonal changes are implementedDevelop menus and item pricingMaintain and exceed food safety standardsEnsure resort food cost is always in line with the budgetAnalyses food cost variance reports provided by finance to identify gaps in production, ordering and invoicingManage all kitchen operational costsMaximize productivity and achieve optimum staffing levels to minimize additional payroll costsEnsure and enforce the set service standard procedures by directing, supervising and motivating staff to perform to the highest levelObtaining feedback on food and service quality, and handling customer problems and complaintsDevelop future strategy for the business needs ensuring the department\'s requirements are identified and representedDevelop and execute succession plan for department while identifying required training requirement to increase department\'s overall performance.Skills, Experience & Educational RequirementsMinimum of 5 years\' experience in a similar leadership role, preferably in the luxury hospitality environment.International experience is preferredExcellent communication skillsOutstanding knowledge of food safety regulationsAbility to effectively manage a teamAbility to work independently, thrive under pressure in challenging circumstances and come up with proactive, rational solutionsAbility to establish and retain effective working relationships with colleagues and clients / vendorsExcellent organizational and time management skillsAtlantis Dubai is an iconic entertainment destination comprised of two world-class resorts; Atlantis, The Palm and Atlantis, The Royal; offering an unbeatable opportunity for you to grow and develop in your career.
