Job Summary:

The Cost Controller will be responsible for managing and controlling all aspects of food and beverage costs, ensuring profitability and efficiency within our high-volume, premium beach restaurant. This role requires a strong analytical mind, excellent organizational skills, and advanced proficiency in Excel and cost control software. The ideal candidate will be a proactive problem-solver with a proven track record of optimizing costs and maximizing revenue in a fast-paced hospitality environment.

Responsibilities:

Cost Analysis and Control:

Monitor and analyze food and beverage costs, identifying areas for improvement and implementing cost-saving measures. Conduct regular inventory audits and reconcile discrepancies. Calculate and analyze food and beverage cost percentages, identifying trends and variances. Develop and maintain accurate cost tracking systems and reports. Ensure adherence to established cost control procedures and policies.

Inventory Management:

Manage and optimize inventory levels to minimize waste and ensure product availability. Oversee the receiving and storage of goods, ensuring accuracy and quality. Conduct regular stock takes and reconcile inventory records. Implement and maintain effective inventory control systems.

Supplier Management:

Negotiate pricing and contracts with suppliers to ensure competitive rates and quality products. Evaluate supplier performance and identify opportunities for cost savings. Maintain strong relationships with suppliers and resolve any issues or discrepancies.

Data Analysis and Reporting:

Prepare and present detailed cost reports to management, highlighting key performance indicators. Utilize advanced Excel functions (e.g., pivot tables, VLOOKUP, macros) to analyze data and generate insights. Utilize cost control software to generate reports and provide analysis. Develop and maintain budgets and forecasts.

Menu Engineering:

Analyze menu item costs and profitability, providing recommendations for menu adjustments. Collaborate with the culinary team to optimize recipes and minimize waste. Monitor and analyze menu pricing to ensure competitiveness and profitability.

Software and Systems:

Proficiently use and maintain cost control software (e.g., ChefTec, CrunchTime, etc.). Maintain and develop excel based cost control tools. Ensure data accuracy and integrity within all systems.

Compliance:

Ensure compliance with all relevant health and safety regulations. Maintain accurate records and documentation.

Qualifications:

Bachelor's degree in Accounting, Finance, Hospitality Management, or a related field. Minimum of 3 years of experience as a Cost Controller in a high-volume restaurant or hotel environment, preferably in a beachfront or luxury setting. Advanced proficiency in Microsoft Excel, including pivot tables, VLOOKUP, macros, and other advanced functions. Proven experience with cost control software and systems. Strong analytical and problem-solving skills. Excellent communication and interpersonal skills. Ability to work independently and as part of a team. Knowledge of food and beverage cost control principles and practices. Experience in the UAE hospitality industry is highly desirable.
