Job Description

Job Summary:


The Commis 2 supports the daily operations of the kitchen by preparing ingredients, cooking food, and ensuring high standards of cleanliness and organization. As a Commis 2, you will take on more responsibility and have a deeper understanding of the kitchen's workflow and specific culinary sections.

Key Responsibilities:



Food Preparation:

Prepare ingredients for cooking and assist in cooking tasks as directed by the Chef de Partie or Sous Chef. Execute basic cooking techniques and understand recipes to ensure consistency in taste and presentation. Assist with the preparation of mise en place and ensure that everything is organized and ready for the day's service.

Cooking & Production:

Cook and assemble dishes in a specific section (e.g., grill, sauce, or pastry), following established recipes and guidelines. Monitor the progress of food preparation to ensure it is completed in a timely and quality manner. Ensure that all dishes are served according to the restaurant's standards for taste, appearance, and presentation.

Kitchen Hygiene & Safety:

Maintain a clean and organized work area, adhering to kitchen cleanliness standards. Follow all health and safety regulations, including safe food handling, sanitation, and storage procedures. Ensure proper use and care of kitchen equipment and utensils.

Supporting the Senior Chefs:

Work under the supervision of the Chef de Partie or Sous Chef to learn and perform new techniques and tasks. Assist with the training and development of junior kitchen staff. Follow the instructions and recipes provided by senior chefs to ensure quality and consistency.

Stock Control:

Assist in receiving, storing, and rotating food stock, ensuring that all items are stored in the correct conditions and used within their shelf life. Help with inventory checks and report any stock shortages or discrepancies.

Menu Execution:

Assist in preparing menu items and ensuring that they meet the required quality standards. Help prepare daily specials and assist with modifications based on customer preferences or dietary restrictions.

Team Collaboration:

Work effectively as part of a team, supporting your colleagues in the kitchen. Communicate effectively with other kitchen staff to ensure smooth operations, especially during peak times.

Qualifications & Skills:



Culinary diploma or equivalent qualification, or at least 1-2 years of experience in a kitchen environment. Knowledge of basic cooking techniques, food preparation, and kitchen operations. Ability to work in a fast-paced environment and manage time effectively. Good understanding of kitchen hygiene, safety standards, and food handling procedures. Ability to follow instructions and take constructive feedback. Strong team player with good communication skills.

Personal Attributes:



Passion for food and cooking, with a desire to learn and develop culinary skills. Strong attention to detail and organizational skills. Ability to work well under pressure, especially during service hours. Flexibility to work in different kitchen sections and adapt to new tasks.
