Duties & Responsibilities:
Prepares and monitors annual F&B budget of GSHA & GSH Shj & GSHC Boutique hotel, subject to approval by General Manager. Projects monthly revenue goals and the expenses for the Food and Beverage department as well as generating various business volume forecasts and planning accordingly.
Taking a complete ownership of the F&B department on issues and assigned tasks and also give detail update to the General Manager on the business plan as and when requested.
Takes initiative to research for new products and develop an analysis of the cost and profit benefits for implementation of new revenue generating opportunities. Constantly strive to promote operational awareness and grow revenue and income at every possible opportunity.
Responsible for gracious guest services and interaction from arrival to departure from outlets, attending to guests enquiries, comments and concerns while representing Golden Sands Hotels & Hotel Apartments in a very professional manner and appearance.
Work with the Executive Sous Chef and Restaurant Supervisor closely to hold the standards of products and operational execution of services. Continuously review, direct, evaluate and improve food and beverage services with this core F&B team.
Responsible for knowledge about all food and beverage products served, from the raw ingredients to final preparation, plating and food presentation, a complete understanding of the kitchen meal timings and execution of all menu items.
Maximize sales across all food and beverage products and areas by developing a "sales & service culture" throughout the department.
Develop, define and implement relaxed, yet impeccable service standards in all Food and Beverage service areas, ensuring a consistent, flawless and exceptional customer delivery every time.
Ensure that any new products or promotions related to Food and Beverage are executed properly following the implementation and roll out.
Control and manage all costs - particularly salaries/payroll, laundry, working replacements and food/beverage cost of sales- at all times and in accordance with budget.
Ensure a great ambiance and atmosphere in all service areas, ensuring it is clean, serviced, without defect or damage. Daily /weekly cleaning and stock of interiors, service areas and table wares and furniture are well maintained at all times.
Should act as a liaison between the guests, service staff, and kitchen. He has to provide staff members with leadership by being an active participant on the floor. Be seen as a source of information and guidance, offer relevant information, and motivate through example.
Create a positive team atmosphere among team members and treat all employees fairly, with respect, impart proper trainings, set a high standard of team behavior and above all strive to boost employee satisfaction regularly.
Schedule periodic food and beverage service staff meetings and daily briefings to ensure correct interpretation of policies and obtain relevant feedback from associates and coach the team on how to exceed guest expectations.
Ensure full compliance of all team members in Staff grooming, Food Hygiene, Food Safety, Licensing and Health & Safety as directed and as per the guidelines of Sharjah & Dubai Municipality at all times.
Co-ordinate with the Human Resources team in matters related to staff hiring and recruitment, annual staff vacation, annual staff performance reviews, payroll, daily time attendance and overtime records of all employees.
Co-ordinates with the Cost Controller & Finance head, regarding pricing and costing of food and beverage menus, billing and correct P.O.S - Micros postings, controls and manages void cheques, complimentary meals, guest entertainment as per accounting procedures.
Co-ordinates with the Marketing Director and Marketing team with F&B related events, merchandising and promotions.
Coordinates with the Purchase department and the Store -Keeper for a smooth, prompt and efficient purchasing, to determine the minimum and maximum par stocks, approves purchases and other Food and Beverage items in accordance with quality standards, issuing of daily supplies, stock control and follow up on new suppliers whenever needed.
Communicate effectively with all key management and other Head of Departments across hotels lines.
