Job Description

Located in the heart of Dubai's vibrant Business Bay district, Park Regis Business Bay Hotel is dedicated to delivering exceptional service and providing unforgettable experiences to our guests. As part of our commitment to excellence, we are currently seeking a dynamic and multi-talented individual to join our team as a Chef De Partie (Cold Kitchen).

Key Responsibilities:

Prepare a variety of cold dishes including salads, and appetizers according to standardized recipes and specifications.

Special in Cold Kitchen with knowledge of Sushi, Canape, Cold appetizers, Sandwiches and Carvings

Ensure that all dishes leaving the cold kitchen are of high quality, visually appealing, and meet food safety standards.

in managing inventory levels for cold kitchen ingredients, ensuring freshness and minimizing wastage.

Organize and manage the cold kitchen station efficiently, including mise en place, cleanliness, and equipment maintenance.

Collaborate with Executive Chef to develop new cold kitchen menu items, taking into account seasonality, guest preferences, and culinary trends.

Train and supervise associates, ensuring adherence to recipes, portion control, and sanitation standards.

Coordinate with other kitchen departments to ensure timely preparation and delivery of cold dishes as part of a cohesive dining experience.

Adhere to all food safety and hygiene regulations, including proper storage, handling, and labeling of perishable items in the cold kitchen.

Pay attention to detail when plating cold dishes, ensuring consistency in presentation and garnishing techniques.

Stay updated on culinary trends and techniques related to cold kitchen preparation, and suggest improvements to enhance efficiency and guest satisfaction.

Requirements and Skills:

Proven experience working in a cold kitchen environment, preferably in a hotel or fine dining establishment.

Strong culinary skills with expertise in cold food preparation techniques, including salad composition, terrines, and pates.

Ability to develop creative and visually appealing cold dishes while maintaining flavor balance and consistency.

Meticulous attention to detail when plating dishes, ensuring precise portioning, garnishing, and presentation.

Excellent time management skills to efficiently handle multiple tasks and meet deadlines in a fast-paced kitchen environment.

Capacity to work effectively as part of a culinary team, collaborating with colleagues to ensure smooth kitchen operations.

Clear communication skills to effectively convey instructions and coordinate with other kitchen staff.

Flexibility to adapt to changing menus, guest preferences, and kitchen priorities while maintaining high standards of quality and consistency.

Strong understanding of food safety and hygiene practices, with strict adherence to sanitation protocols and HACCP guidelines.

Good physical condition and stamina to withstand long hours standing and working in a kitchen environment.

Willingness to participate in ongoing training and skill development initiatives to enhance culinary proficiency and knowledge of cold kitchen techniques.

Qualifications:

Culinary qualifications or certifications from accredited culinary institutions are advantageous.
