The Role:
Support the Cluster Executive Chef in all phases of the kitchen\'s operations.
Responsible for the efficiently and profitable functioning of the Kitchen assigned.
Ensure that hotel standards are applied to the production of food and the cleanliness of the kitchen and equipment
Key Deliverables and Responsibilities:
Operational Management:
Prepare and arrange the buffet, functions and a la carte service.
Actively share ideas, opinions and suggestions to improve the environment and menus.
Ensure consistency in the preparation of all food items according to hotel recipes and standards.
Communicate effectively with the HACCP team and thrive for guest feedback.
Assist with the training and development of junior team members, including apprentices.
Ensure we rotate stock to minimize any food wastage.
Ensure that all dishes are prepared according to the recipe and to the correct quantity.
Closely communicate with Food & Beverage Team, on special functions, booking, menu item availability, service problems, guest comments and guest preferences.
Ensure to take extra care to prevent the use of contaminated products in any process of food preparation.
Ensure that all stocks are kept under optimum conditions and any anticipated shortages are communicated promptly to the Sous chef or Executive chef.
Generic Aspects on Hygiene / Personal Safety / Environment/Confidentiality:
Ensures that the equipment and appliances are used correctly in line with safety instructions.
Helps the Cluster Executive Chef prepare an action plan following the hygiene analysis results and tracks implementation
Understands and strictly adhere to the Rules & Regulations established in the Employees Handbook and the Hotel\xe2\x80\x99s policy on Fire, Hygiene, Health and Safety.
