As a Chef de Partie (CDP), you are responsible for taking care of the daily food preparation and duties assigned to meet the set standard and qualities whereby your role will include key responsibilities such as: 1. Enforces and ensures that all food production by the kitchen crews is of the utmost highest standard. 2. Make sure that all food leaving from the kitchen is from the highest Quality and up to the required standard. Prepares requisition for all items needs based on stock and business. Checked the items upon arrival and inform Executive Chef/Sous Chef of quality. Check daily function and prepare food accordingly and effectively. 3. Endeavors his best to maintain employees productivity, interest, and loyalty (especially where expensive equipments are concerned). 4. Ensures familiarity and knowledge of raw materials and supplies, its care, proper storage, and usage procedure. 5. Ensures familiarity and knowledge of cooking techniques and what to use as raw materials, and strictly conforms to standard recipes & menus as approved. 6. Works and inspires his team so that they have interest and esteem in their job. 7. Supervises, checks his staff for quality production as well as presentation, and spends most of his time on the floor. 8. Plans and coordinates the schedule of cleaning with regards to the production area including equipment (Cooking Range, Oven Hoods, Dampers, Vessels) walls, ceiling, tabletops, chillers, freezers, trolleys. 9. Ensures proper disposal of used / unwanted/discarded items: expired/spoiled food, old oil, packets, tins, etc. 10. Enforces, maintains, and ensures that our food quality to our customers is of the highest standard and taste must be consistent. 11. Observes all Health & Safety, fire prevention procedures, and conformity always according to HACCP standards & procedures and as per HACCP Manual. 12. Maintains and ensures that his Chefs are always at the highest standards of personal hygiene. 13. Ensures that all energy is conserved, unnecessary lights are switched off, unnecessary equipment is switched off and unnecessary running of hot and cold water is minimized. 14. Ensures familiarity and knowledge of fire safety training, evacuation and emergency policies and procedures, especially in regard to the workplace. Skills:Education, Qualifications & Experiences: You should have a professional kitchen apprenticeship or chef training course and previous experiences in quality establishments along with good culinary skills. The ability to communicate well in English and a proven track of food preparation, presentation and preservation knowledge is an essential.
